In a peaceful position beside a bubbling stream, Annabel and Stephen Thomas's country hotel, a 16th-century farmhouse (later a school), 'lived up to expectations' in 2011. 'After a stressful journey, the gentle greeting and tea in front of a fire were a wonderful antidote,' wrote a visitor. 'This rambling, low-key country retreat is good value for money,' said a reporter. In a village on the edge of the Brechfa forest, it has thick exposed stone walls, fireplaces and beams. The simple bedrooms have pine furnishings: 'We liked our spacious room.' In the stone-walled restaurant, Stephen serves a daily-changing menu of seasonal dishes using local ingredients, perhaps griddled lamb chops, chestnut and leek gravy, braised shallots. 'His mashed potato was a revelation, light and bursting with flavour.' Annabel is responsible for the puddings: 'Her pear and almond sponge with home-made honey ice cream was subtle, soft and profoundly comforting.' The cooked breakfast has home-cured bacon, black pudding, free-range eggs; honey and preserves come from a nearby farm. (Frank Cockman, Mary Milne-Day)

  • Rare perfection was delivered at this charming country house. Annabel Viney's management and Steve's outstanding cooking have earned a worthy reputation. Our room was vast: everyething had been thought of. Tea was served in arrival. The bar was well stocked. Service at dinner was immaculate. Breakfast did not quite live up to the rest.
