'Aynsome is not plush but it scores on other virtues: first-class food, a warm welcome and farewell (with cases carried), and exceptional value.' Praise again this year from returning visitors to the Varley family's traditional hotel, a 17th-century stone manor house between the fells and the sea in the Vale of Cartmel. Another view, from a guest who had 'a bad experience' at a nearby (unnamed) hotel: 'What a pleasant surprise; excellent and friendly.' It is owned by Chris and Andrea Varley, second-generation hoteliers; Ben and Antonia Shepherd are the resident managers. They tell us that this year the lounge has new carpets and seating. Bedrooms vary in size and view: 'Our room was excellent, well kitted-out and comfortable.' Two rooms are in a cottage across the cobbled courtyard, which has its own sitting room. In the oak-panelled restaurant, chef Gordon Topp's daily-changing menu of dishes 'presented with imagination' might include escabeche of mackerel, apple and walnut salad and citrus dressing; roast chump of Cumbrian lamb with braised red cabbage, redcurrant and thyme jus.   • Professional, caring proprietors, friendly, well-trained staff. The restaurant runs on oiled wheels. All this for a msot reasonable price.
