Gravetye Manor

'Change without change' is the philosophy behind the extensive renovation of this luxury hotel (Relais & Châteaux). The creeper-clad Elizabethan manor house stands in wooded grounds and fine gardens designed by William Robinson, pioneer of the English natural movement. The owner, Jeremy Hosking (a fund manager and former guest), has appointed Andrew Thomason as managing director. Guide inspectors were impressed: 'The style remains that of a classic country house, but it has a relaxed air and is not at all stuffy; the staff were charming.' The smell of polish and wood smoke (from open fires) pervades the panelled public rooms 'which retain their Arts and Crafts feel; wonderful fresh flowers everywhere'. A log fire burns in the dining room (candles on well-spaced tables, no background music at dinner). The cooking of chef Rupert Gleadow is 'of the highest order: a tasty cup of crab and sweet potato; well-judged portions of smoked duck with prunes, pollack, garden leeks and broccoli'. All the bedrooms have been redecorated and given a new bathroom. The restoration of the gardens is 'impressive; thoughtful planting, exuberant colour'.
