In pastures and woods in the rural Irish Midlands, this fine Palladian villa is the family home of Paddy and Hannah Flynn. The restoration of the house has been a labour of love for the family for many years. 'They continue to make improvements,' says a returning visitor this year. 'Our bedroom had been repainted (the same lovely green and white); the walls and floor of the bathroom had been tiled.' The spacious bedrooms in the main house have high ceiling, original features; four smaller rooms in the Yellow House (an older building) face a walled garden. Rooms are 'spotlessly clean and comfortable'. Paddy Flynn cooks an 'excellent' five-course dinner on five evenings a week, using 'simple and honest' ingredients for dishes like tempura salmon, ginger and sesame; sirloin of beef, Irish whiskey and peppercorn sauce, warm sweet potato salad. Orange juice is freshly squeezed for breakfast, which has home-baked bread and scones. Theatre performances are held. 'A one-act play by Shaw was followed by readings of ghost stories by candlelight.   • Last Friday we went to Roundwood House again. They were doing a Halloween evening, most unusual and entertaining: a buffet dinner, a play, ghost stories, dozens of candles. Our room had been repainted since our last stay and its bathroom upgraded. The orange juice at breakfast was most definitely freshly squeezed! Hannah makes her own soda bread: Paddy's mushrooms with blue cheese were served on lovely toast.
