In a commanding position above Hugh Town, this star-shaped Tudor fortress, with additional rooms in single-storey buildings in the grounds, is owned by the Francis family; James Francis runs front-of-house with a long-serving staff. Guests are met at the harbour or airport. Bedrooms in the castle have bold colours and dark furniture in keeping with the age of the building. The garden rooms are built around lawns and flowerbeds; each has a veranda with chairs. 'The view of the seascape of islands from our garden room more than compensated for the sometimes blustery walk from the main building,' say visitors this year. 'The room was smallish but had everything you need - comfortable bed, decent lighting, a tea tray.' The chef, Gareth Stafford, serves 'beautifully presented and imaginative' English/French dishes in the Castle restaurant, once the officers' mess, eg, roast saddle of rabbit stuffed with spinach, pine nuts and blue cheese. In summer, seafood is a speciality in the more informal Conservatory. At breakfast, James Francis provides a weather report, while Tim, the boatman, outlines his itinerary for the day.   • A friendly welcome. Our garden room was smallish but had everyething you need. and a veranda with a fine view. We thought the dining room a little cramped. The Conservatoy restaurant was spacious and light. Fish dishes beautifully prepared. Breakfast had a rather ordinary buffet, a wide range of cooked dishes, ordinary toast. Staff very efficient.
