'Each member of staff that we met during our stay was delightful,' says a visitor this year to this wisteria-covered, castellated hotel in the centre of Taunton. Once a Norman fortress, it has been run by the Chapman family for 60 years. Kit and Louise Chapman are in charge; Marc Mac Closkey is their new manager in 2012. The bedrooms, reached by a fine wrought iron staircase, have been designed by Mrs Chapman. They vary in size and outlook: 'Although not huge, my single room had a good-sized desk and wardrobe; the bathroom was gleaming and exceptionally well lit, and had very good towels.' Changes to the dining options were announced as the Guide went to press: a new chef was being appointed, and a 'cool, informal, retro-chic' restaurant, Castle Bow Bar and Grill, was due to open. It will have a separate street entrance and will run alongside the 'excitingly modern' BRAZZ restaurant, which has 'a warm and friendly buzz'. Breakfast is self-service; there is an 'impressive array of cereals, fruit, yogurts and preserves'; a selection of dishes cooked to order. (Trevor Lockwood)
