Beyond the rustic weatherboard exterior of this historic 18th-century mill, find ‘stylish’ bedrooms, ‘good’ modern meals – and a handy, in-room stock of home-made biscuits ready for the taking. The restaurant-with-rooms is owned by the small East Anglia-based Agellus Hotels group; Malcolm Wyse is manager. Each of the ‘luxurious’ rooms, sleekly monochrome, has its own character: three, in the mill, have exposed beams and an oversized stone bath; loft suites, accessed via external stairs, have a balcony; other rooms, overlooking millstream or water meadow, have a private patio. All have an ‘ultra-modern’ bathroom with ‘high-quality extras’ like dressing gowns and top-end toiletries. Evenings, book a spot for dinner in the candlelit restaurant. Chef Lee Bye uses seasonal ingredients to create inventive dishes based on local produce: Norfolk quail, hazelnuts, smoked garlic, pak choi; Denham lamb chop, asparagus, burnt aubergine, ricotta. A vegetarian guest was ‘particularly well looked after’. Next day, after an ‘excellent’ breakfast, take to the open countryside: hybrid bicycles are available to borrow; walking and cycling paths, surrounded by wildlife and heathland, abound. (EJH)
