Good Hotel Guide Review
‘Grand and glorious’ Hilton Park is less a hotel than a stately ancestral home where one stays as a cherished guest. ‘The Castle’, as the antique- and painting-filled 18th-century Italianate mansion is known locally, is today run by ninth-generation Fred and Joanna Madden. Outside, there’s fishing, boating, wild swimming, rambling, rounders. Inside, spacious bedrooms, some with floor-to-ceiling windows overlooking parkland, are furnished with family heirlooms. Books are everywhere – ‘the accumulation of centuries of reading’. To fully soak in the atmosphere, ask for the bathroom with a freestanding bath overlooking the lake. Come dinnertime, gather with fellow guests around a mahogany table, with one of the family playing host. Fred Madden’s four-course menu, supplied with meat and fish from the estate, and the large organic kitchen garden, might include garlic and thyme soufflé; rack of spring lamb, herb crust, quince and mint jelly. (Before a dessert of blackcurrant leaf panna cotta and poached rhubarb, spare a glance at the ornate plaster ceiling, inspired by an ancestor who sailed with Lord Nelson.) ‘Simply the best.’ More reports, please.
