‘The moment you walk into the cloistered entrance of this gem you are reminded that it was a 12th-century Cistercian monastery,’ writes a Guide inspector, of the Martinez family’s foodie hotel. Bedrooms, each with its own distinctive character, range from cosy to luxe. Room 1180 has a vaulted ceiling, in-room bath and views of the lovely mature garden. Dog-friendly rooms in the cottage annexe have semi-private outdoor space. ‘The Spanish vibe is first evident in the bustling bar, where guests enjoy tapas in an easy, mood-lit setting.’ In the newly revamped dining room you find wine chillers, dry-aging meat fridges worthy of Damien Hirst, and chefs at work over flame grills in an open kitchen. The menu features dishes such as ‘mouth-watering cured mackerel’; tomato crème brûlée, heritage tomatoes, Bloody Mary purée, sesame cracker; Josper pork rillette, Guinness-pickled shallots, manchego espuma, Scotch bonnet oil. ‘Service was swift and efficient.' Breakfast brings ‘an array of excellent options using locally sourced produce with the open-fire cooking’. Occasional wine dinners are held on the lawn, with live music, and great alegría de vivir.
