In a 'delightful location' near Vacqueyras, at the head of a wooded ravine below the rocky Dentelles de Montmirail, this 19th-century building was once a spa centre. 'We once again enjoyed its friendly atmosphere,' says a visitor on a return visit. 'The food and wine remain good.' The 'charming' owner, Marc Nicolet, 'never stops working, whether clearing the table before breakfast or waiting at table in the evening'. Jean Padilla's excellent no-choice menu du jour is served under an ancient plane tree on a lovely dining terrace by the swimming pool, or in a rustic dining room with Provençal fabrics.
