The defunct 17th-century Marquis of Cornwallis pub has been enlarged, refurbished and reborn as a luxury hotel and wedding venue with subterranean spa. Bedrooms all have a muted colour palette and range from classic doubles, with super-king bed, espresso machine, organic toiletries and monsoon shower, to the Cornwallis Suite with balcony and views of the Brett Valley through a floor-to-ceiling window. The glass-walled restaurant, in an oak-framed extension, with open kitchen and dining terrace, offers seasonal menus of dishes such as East Coast sea bass, clams, spinach, rainbow chard, globe artichoke purée, pink grapefruit butter sauce or steaks and burgers from the grill. If you eat alfresco, your dog can join you.
