All dark timber, glass and striking sea views, this sleek restaurant-with-rooms brings a fresh perspective to the traditional English seaside. It is owned by Mark Sargeant and Josh de Haan. The stylish, purpose-built bar and dining room are cantilevered over the harbour, their vista stretching to the Channel. Find a seat on a leather banquette, or on the terrace in fine weather, to sample dishes off the ‘imaginative’, wide-ranging menu, which uses fish caught by local day boats off the southeast coastline. Typical offerings: lobster and salmon pasty, pickled cucumber; pan-fried whole lemon sole, brown caper butter. Bedrooms are across a cobbled street. Here, walls of stripped-back stone frame an outlook on the water (binoculars are provided); in the morning, a continental breakfast hamper is delivered to the room.
