Surprises spring up in Robert and Helen Hicks’s restaurant with rooms, crafted from an 18th Century manse on the waterfront. Beyond a plain, white exterior, the house (named after a type of sailing vessel) is lushly decorated with dark parquet floors, velvet and leather seating, swashbuckling wallpaper. Tweed blankets and landscape views across Loch Broom bring the Highlands into three smart bedrooms upstairs, each supplied with bathrobes and an espresso machine. Along a corridor, discover a hoard of treats in an honesty bar and ‘Sweet Shop’. In the restaurant, terse menus create anticipation for chef David Smith’s fine gourmet dishes. The owners’ gin can be sampled in the intimate Tasting Room.
