Driven to extinction in Britain by Victorian trophy hunters, the great bustard has been reintroduced on the Great Durnford estate, where the knackered Black Horse pub also has a new lease of life. There is a locals bar, a glass-walled restaurant with open kitchen, a terrace for alfresco dining. Two house bedrooms and eight in purpose-built lodges have a natural, airy feel, with sisal rugs on oak floors, a super-king bed, espresso machine, Durnford organic products. Jordan Taylor makes creative use of estate and kitchen-garden produce in a menu that runs from small plates, pub classics and wood-fired pizzas to dishes such as confit pork belly, mushrooms, black garlic; pea risotto, sunflower pesto, ricotta. An onsite farm shop and treatment room add to the appeal.
