On the Mawddach trail, Marc Russell and Nick Banda’s stone-built restaurant-with-rooms stands at the southern gateway to Snowdonia national park. Days spent tramping up and down mountain paths end in cosy, tweedy rooms, where beds have luxurious linen and Welsh blankets; modern bathrooms have a walk-in shower or a bath, good toiletries, a slate floor. Guests and locals mingle in the friendly bar (perhaps over one of the vast selection of gins). Chef Robin Agnew creates comforting seasonal plates in the smart cellar restaurant, set within the exposed stone walls of the former county jail: the likes of oven-baked cod, sliced chorizo, chilli, garlic, tenderstem broccoli, baby potatoes. A hearty breakfast is fuel for hiking and biking in the surrounding hills.
