Within the city’s Roman walls, this modern hotel occupies the former Ship, a Grade II* listed Georgian building steps from Priory Park. It was acquired by the Harbour Hotels group in 2016 (a sister hotel is in Salcombe, see Shortlist entry). Individually decorated bedrooms, including family rooms, have lively design touches (jewel-toned velvet cushions, an oversized headboard, quirky wallpaper) and views over the park or the town centre. Perch at the marble-topped bar for pre-dinner drinks – ‘15-mile cocktails’, made with locally grown ingredients, are a draw – then choose from the brasserie-style menu (crab and avocado on toast, pickled pear and fennel; a ‘catch of the day’) in the cheery restaurant. A two-course set menu is available weekdays at lunch and early dinner. Chichester Cathedral is a stroll away.
