Steeped in ‘character, eccentricity and individuality’, this atmospheric, history-rich hotel retains many traces of its past as a 12th-century Cistercian abbey. Watch for deer as you approach through a ‘well-maintained’ country park; cross a bridge into ‘superb’ formal gardens. Inside the ‘stunning’ building, there are wrought-iron chandeliers, a carved stone pulpit, antique armchairs in the high-vaulted reception. Long corridors displaying ‘magnificent’ antiquities and china lead to the sumptuous ‘bed chambers’. Rooms may have a canopy bed, original moulding or leaded windows; bathrooms, some hidden behind a bookcase, have a Victorian bath or a richly tiled waterfall shower. Modern dishes (crispy lamb shoulder bon bon and breast noisette, sweetbread, wild garlic mash, spring greens) are served in the conservatory dining room, candlelit at night.
