A modern spa hotel, staffed by a friendly, welcoming team, in a 19th-century watermill in lovely surroundings five miles from the city centre. Stylish rooms in the original building have long views over the well-maintained gardens or river; some have a four-poster, a fireplace; larger rooms (some with private patio, exposed timbers) are in converted barns across the courtyard. Served in the garden-facing Mill House restaurant, or on the patio, chef Gavin Murphy’s modern British and European dishes use locally sourced ingredients. All-day light bites are served in the lounge/bar. The hardest decision is picking from over 50 malt whiskies for a nightcap. The spa has a sauna, treatment rooms, a mud chamber and indoor pool.
