From clear-eyed ethics to contemporary style, nothing is compromised at the McLaren-Stewart family’s vegan hotel and restaurant, in woodlands and gardens overlooking the town. Everything in the Victorian gabled house has been sustainably sourced: the plump pillows, fine linens and Scottish toiletries in the colourful bedrooms; the vegan liqueurs and biodynamic wines at the bar; the right-on cleaning products used behind the scenes. A supper-club atmosphere reigns each evening, as guests, including the ‘plant-curious’, mingle at a communal table for an inspired five-course menu, with asparagus and chargrilled artichoke hearts, say, or butternut squash risotto, sage crisps. Breakfast is a lavish cold spread.
