Highland heritage is brought well up to date at this stylishly refurbished Victorian hunting lodge on the Isle of Skye. Owners Anne Gracie and Ken Gunn have filled their modern hotel with bold colours and plush fabrics. Sip afternoon tea by the log fire in the lounge or outside on the south-facing deck; take pre-dinner drinks in the Chart Room. In the restaurant, daily-changing modern Scottish menus feature plenty of island produce in season. Bedrooms with views towards mountains or water are all different: some, rather dramatic, have a four-poster bed; others, unfussy, are sleeker. From April to September, book a day of whale spotting on the hotel’s luxury yacht.
